Did the 2.25 level it out with the rear pretty good?
They are so inexpensive it's almost worth trying them out, and if I don't like the ride, invest in some new suspension...but wanted some real world feedback on high speed driving.

I've done them all. Just spacers up to 2", coilovers to 2.5", 5100's, 5100's with spacers. Just my opinion, but a full set of coilovers is the best way to go, other than a true lift. I've never seen a true lift at the height you're talking.
With coilovers, you get new springs, comes all preassembled, some are adjustable height, and easier than Bilstiens to deal with. And with the cost of labor, likely in the ball park of the total cost of Bistiens to install. Basically plug/play, no taking the struts apart, and safer to do.
Eibach Pro front shocks installed Friday. Paid $350 for local lift shop to install and align. Had the shocks set at 1.4” but got almost 2” of lift. Not complaining entirely as I figured I’d get more than 1.4” but anticipate them settling some so anywhere between 1.4”-2” I’ll be happy with. I’m sitting 3/4” taller in the rear still, if I don’t settle any I may put a taller block in the rear.
They ride great. More firm and planted but not rough or stiff. Also, I have 285/60/20 Cooper Discoverer AT3 XLTs as well
Input from any and all: if you had to guess, what wheel size and offset could this be? And lift size? Or just a level kit?
