What are you using for reverse lights?
There are ways to mount the switches that don't look too bad. I picked a blue that matched the rest of my dash lights at night.
For the infrequency you plan to use your switch you certainly could hide it easy enough. I wanted switches more accessible as sometimes I need the lights when the truck is off. Its easy for me to open the door and just flip a switch to the lights I want. That is why I located them as close to the drivers door as possible. I personally wouldn't want to be feeling under the dash for a hidden switch in the dark when I'm quickly needing some light.
But I certainly understand your reluctance to cut into the dash and keep the switch out of site. To each their own I suppose. After cutting metal holes in my rear bumper to mount the Rigid flush mount lights cutting a little plastic trim piece by the steering wheel seemed like a walk in the park. ha
So I finished the install today. Too impatient to wait for the weekend. I cut the bumper, ran a new relay and put them only on a switch in the cab. I did this for two reasons!
1. They are bright as $h/t and if I don't need them reversing, why have them on. Also, I like to just turn them on without being In reverse for multiple applications.
2. If some @$$hat rides my rear bumper, it's gonna be real hard to continue after I flip my rear lights on and blind the mfer.

The beauty is if you ever get tired of manually turning them on in reverse you can always tap a reverse light wire and add to your relay where the current switch for "on" wire goes. Then you have both.

I would like them to come on automatically when I put the truck into reverse. I am a little confused on how to make this work as most guys wire in a on/off switch.
Can I tap into the trailer harness for power and wire in a relay for the lights? Also use the reverse light signal to activate the relay? It's been awhile since I've wired in a relay but please correct me if I am wrong.

When I initially installed mine, I just tapped into the reverse wire in the 7 pin harness without using a relay and had no problems. Had it that way for about 3 months. I'm running a switch now though. The LED cubes have such a low draw that it won't affect anything if you don't put a relay in.
Why did you change to a switch? I have led's in my reverse lights so I know their draw is low. I will see how much power these lights draw.
