Ode to thine Sync.
This is a hilarious thread. . . . Although so far my sync works flawlessly. . . I have only used it with my Droid for phone calls and a little bit of BT streaming.
I have yet to fully activate "her" yet. Maybe I shouldn't with these other problems popping up. Besides, I've seen what the machines can do when judgement day comes!!!
BTW, have had my XLT, Scab, Eco, 4x4 for about 3 weeks and love it so far. About 800 miles to date. Need to hit that 1,000 mile break in, got a Bobcat skid steer to tow over to my house, about 9,800 lbs with trailer. Put this truck to work!!!! (off topic I know, but curious to see how she does)

My Sync doesn't understand anything I say. And then once you mess up, it won't work proper till you reset it.

Mine was working great except the occasional "we lost your ipod and can't find it" once a month where all I'd have to do was take the fuse out for 3 minutes to reset and good for another month.
Then I installed the new "update". Definitely more of a PITA now. Fail. You would think I'd have learned by this point... if it ain't broke, don't fix it.
Haha, I agree though, the voice recognition is usually flawless until you go try and show your friends how it works. 99% of the time it'll nail that favorite song you play so often that sync will cut you off mid syllable because it knows exactly what you want. Until you get a group of your buddies around and it decides to play the most embarrassing song (everybody's got em) you've got on there that sounds NOTHING like what you wanted. Whoops!

Of course you realize that your music files need to "tagged" correctly and that includes the "Genre" tag which needs to be populated with whatever genre the music is.
My joy for the week (I work from home) is driving to the grocery store so I can listen to my tunes. It's a 15 minute trip and we spend 12 mins arguing about song titles and genres... Christ, I just want to hear my tunes!

I got 6000km to drive coming up in two weeks for a hunting trip, hopefully she'll cooperate because my huntin' partner is in for a few laughs in my song library thats for sure

Try using a usb flash drive instead of an ipod, it will work 100X better. Also Ive read that the 2011 version doesnt have voice training you can start yourself anymore, it just learns automatically the more you use it, so just keep using it and trying various commands with it as the more you use it the better it will learn your voice. My 2010 version works flawlessly except for the occasional time im trying to show it off also, funny how that works out.

Sync works perfectly in my wife's 2009 XLT and in my 2010 but when I traded in for a 2011 I experienced nearly every problem you've posed in prose.
My biggest frustration is the very poor way Sync plays with my ipod. In my other trucks it worked flawlessly but in the 2011 it connects about 1/4 the time. I now have to go through the "disconnect ipod before shutting down/ startup with the radio and wait five minutes before connent ipod" dance.
My only complaint is that I need to disconnect the iPod every time I leave the vehicle so I can get it to start up in a timely fashion for the next time. If I leave it plugged into the USB for any amount of time after leaving the truck, my BT and iPod wont respond for anywhere from 2-10 minutes after driving.
