My 2003 Ford workshop manual uses the term oil pressure sensor for the 4.2 but only uses the term oil pressure switch for the 4.6 and 5.4. Many instances in the manual and they always use "switch".

I've not tried to see oil pressure on my OBDII scanner so can't say if it's easily accessible.

Oil pressure as an actual value is ONLY available on those engines that support it. The OP was asking about his 2012 5.0Lwhich did not have that capability.

As already pointed out, things change over time so you have to check the individual vehicle/engine in question for what is available.

My Ford service library covers everything from 1992 through 2013, most of 2014 (except F150, unfortunately), and about half of the 2015 models (bought it for my Explorer). I've yet to run across a single incidence where there is an actual pressure sensor/sender/transducer in any of the models I've happened to looks at. Obviously, there are numerous models I've never checked them all and don't intend to so there may be an Easter egg in there somewhere where a real pressure sender was used.

Also obvious is that I am not in a position to comment on the newer vehicles that I do not have documentation for. If a 2020 EB is equipped with a real transducer, that's quite interesting. Would be interesting to know when and across what platforms that was phased in.

Checked my long list of forscan pids available from my 2010 and no oil pressure listed ( only baro , fuel and power steering pressure pids only)

The gauge is a switch, the sensor it supposed to be "real"

It would take more than luck, it would take a miracle since, according to the factory documentation, your era of trucks had only the pressure switch.

in the mean time, someone who’s actually put an OBDII reader to a 2003 and used forscan as well, has actually shown it gives actual pressures. See screen shots above.

where are your screen shots showing oill psi on a 2012?

and where are the screen shot of a basic code reader reading actual oil pressures on a 2003?
