Most likely. If you cut all the cats AFTER the o2 sensor it'll be no different. If you cut one before an sensor, your light will probably come on.
That being said, I'm running true dual straights (they were on the truck when I bought it) and I don't have a CEL for that reason

My truck runs w/o cats and the check engine light is not on.... Not sure where they were mounted as I was not the one to take them off, but everything works and sounds great now (dual glasspacks sound awesome) My exhaust "system" on my 90 4x4 reg cab short bed ends at the back of the cab so... not much of a "system" left lol
Your check engine light will not come on if you remove the cats because you only have the one oxygen sensor. OBDII vehicles the light would come on but yours is OBDI. I wouldn't remove them though, only because you're in Jersey and the inspection ***** will shoot you in the face.

i'm gonna take mine off, and yea there are three sensors on mine, one in each manifold, and one before the cat, so next chance i get that sucker is outta there, and where i live there are no inspections or emissions
Yours is OBDII so if you don't want to look at the check engine light all day long you need an oxygen sensor eliminator.
