I had a pretty similar issue, turns out my wires going to the starter had corroded inside of the rubber casing.

Again lots of signs pointing to bad connection. I'd check your connections from battery down to the starter.

Pulled the starter connections and cleaned them, they looked ok but now nice and clean. The only issue is where the negative wire connection. It's a full threaded rod that threads into the flywheel I think. There's a nut then the ground wire then another nut, I can't loosen the top nut the whole threaded rod moves so I'll have to hit it with some pb blaster and see if I can get it off to clean it up.

Did you ever check connection at the solenoid? At the battery?

It's odd because usually first start in the morning is pretty normal but after I drive it and shut it off it will restart perfectly within about 15 minutes of turning it off. But if it sits for like 45 minutes and I restart it it will always do like on the video

Seems like should be a fuel issue, or maybe starter just going

It looked to me you have a fuel/air problem, the engines seems like it's flooded and gulping for air.

a few things come to mind.
1/ clogged air filter (if you're lucky)
2/ leaky injectors.
3/ Fuel pump.

Yeah, I'm thinking the same. Air filter is good. No Schrader valve on these, how do you test fuel pressure?
