I think 7.3 turbo diesel is best choice as you are loving it due to engine which really shows the power and frequency of this ford truck. Honestly, if I am given the right to decide then turbo diesel will be my priority.

 

6.0, I drove a 7.3 before getting my 6.0 and it was a dog. I've read somewhere that the 7.3 actually statistically has more problems than the 6.0. It takes a lot of work to swap the 05+ dash to an older model, and you will probably want the facelift too.
