Interior Work Surface - How Useful?
Good to hear. This truck will be used for business and that's exactly the kinda stuff where I can see it coming in extra handy.
I only use mine once every couple of months, but it's definitely nice to have it when you need it. I don't need it for a small burger, but it's great to have when I get a foot long sub sandwich.
I use mine frequently on job sites taking pictures and hooking up the laptop to the truck WiFi and zooming them around wherever they need to go or making orders, basically lunch or laptop use mostly.
Overall I’m glad I ordered it.

When I brought my new truck home my wife was looking at it and I showed her the work surface. She started laughing and said " I know you spend a lot of time in your truck for work, but I bet you never use it." We went for a drive and I purposely stopped at a drive in in Indy called Mug-Bun for dinner. When our tray of food came out my wife put her root beer in the cup holder and a chili dog and fries on the dash. I opened the work surface and told her we could share it. On the way home she said " Wow that ting is really handy!"

I used it once in the last year when me and my 7
yr old decided to eat fast food on the truck, brought him to the front passenger
seat and used it as a table. Other than that only other scenario where I'd probably appreciate it might be as a contractor who regularly sat in my truck putting together receipts and estimates. I think that's who that's targeted to.
I will say that my asphalt guy seemed to do fine leaning his clip board against the steering wheel of his Silverado or laying it on his console. Contractors wrote up stuff in their trucks before this was a thing and many still do.
I bought a lot truck with the work surface and 20s in peak COVId when it was unheard of to
spot anything remotely close to what you want in the right color on a lot. Otherwise I would have gone with 18s for more inexpensive tire options and more ride compliance. Perusing replacement options for another year or two when these pathetic excuses for all terrains probably go bald I am underwhelmed by my options.

Do you already have a column shifter or electronic folding shifter? If your shifter will intrude I don't think there's any way to make the work surface lie flat.
