FWIW, I installed 18x9 Method Roosts with +18 offset with 275/70/18 GY Duratracs. The tire sits pretty much flush with the stock fender lip and no rub with a level. With the +1mm, guessing you'll have a little poke but not much... This site helped me out a bit in assessing the differences in tire size including wheel offset: https://www.willtheyfit.com/

Thanks, I hope so! Should hopefully have everything here mid next week or so, then get them mount/balanced and get the level put on. Ive been debating on installing the level myself but really not sure I feel like doing it lol

Know what ya mean. I've got a buddy with two lifts in his shop, so you know where I go. I could do it here at the house out in the barn, plenty of room and tools, just need a safe spring compressor. But I'll tell ya, a lift makes it so much easier, and faster. I'd be out in the barn likely all day, when on a lift, 2 hours max for both ends.
