Definite will want a big breaker bar, the bolts on the hangers were okay since they had be replaced recently but the u-bolts were hard, the impact wouldn't move them and I broke an extension.

and to the OP, i wouldnt drive that far especially not having taken your truck that far before. its not just your safety to consider. if you lose it on the highway and slam into a bus full of nuns or something, thats no good. that falls under bad karma.
It's a bolt in swap. Just have to drill your spring hangers for larger bolts.

Could I just grind off the u-bolts with an angle grinder?

Just don't slice into the axle, try a breaker bar first if that doesn't work, heat or cut them.
