Sounds to me like you have achieved a perfect set up:
Trailer level - Check
Front end same level as when unloaded - Check
Tows good at 65 MPH - Check


What else do you want to try to accomplish by removing a spacer?

Wasn't sure. It towed great though, just got back, 700 miles each way.
