Default Payload advantage?

I'm considering a truck with a door sticker payload rating of 1900 lbs. it's a Crew, 4*4, tow package, 6.5 foot bed. Would the HDPP offer me more payload for this configuration?

Always. The question is how much, what cost, and how long you have to wait for it to be made.

It will add about 600 lbs if you are refering to a 2017/2018 truck of similar trim and options. The frames and axles are heavier so you lose some payload from that with the HDPP.
