If you have good compression, spark plugs, and coils, With the O2's out richness mixture is there, maybe some alky in the tank will help with drivability. Try 3 gallons of E85 to a tank full, say a 1/8th mix, that will lean out the mix as alky needs 10/1 vs 14.7/1 when warm and your doing about 13/1 in open loop without the O2's. The leaner mix contains more oxygen due to E85 and may actually have more power. Most trucks can handle Ethanol diluted with gasoline in the fuel systems design.

Get custom tunes for the CAI and no cats and all your other mods and it should stop it from running lean

And yes custom tuners can delete rear O2 sensors which should solve your problem
