Thumbs down truck 'jumps' when accelerating, why?

Whenever I accelerate my truck likes to kinda jump. It happens when I'm going 30 mph thrpugh 70 mph. I though the transmission? But some odd fella I was talking to said something like something about the gas pedal or something. Anyone have any ideas?

mine does something like that, too, but more like when i take off from a complete start, no matter how slow. i'd call it more like "bucking", but jumping fits, too. wonder what that's all about?
it's a 2000 F150 2WD shortbed reg cab, 4.2V6 with the mazda 5 spd and a 3.55 open rear with 255x16 wheels... I've just had the clutch adjusted, the flywheel resurfaced, and i'm using synthetic fluids everywhere... if anything, it's worse now than before the clutch work... PS they did take the trans out for the clutch work. even the shifter is worse off than before.
