Default Rear 02' sensors

What is the purpose of the read 02' sensors?

To make sure the cats are properly working. The front ones test the emissions first and the rears check the emissions as the come out of the cat to make sure they're removing what they're supposed to.

^yep you can trick them and cut off the cats though.

Can I trick them by pulling them completely off? What would happen if I pulled them out an left them out? Or disconnected them?

The reason I'm asking is cause I had a guy cut my back two cats off and he did a hack job and cut them to close to the sensor for me to fix it so I was thinking of cutting it off right behind the sensor and fixing it. If you do this it won't ever throw a code and you won't even have to tune it. How did he cut it too close?
