Default Bigger Shocks?

Ok so I am ordering a few new parts for my 2000 F-150 5.4L 4x4 next week. I have to do my ball joints, and shocks cause both of them are shot. I was also going to crank up my torsion bars and add a block to the back to lift my truck a bit. With that said should I purchase bigger shocks for my truck since it will be higher? Also if so what should the size be etc.

P.S. Any tips on changing the Ball Joints?

You don't have to get a longer shock if all you do is crank the bars, stock sized ones work just fine.
