Or am I SOL and forced to innovate something on my own?
There is nothing that I know of. What I would recommend is getting the tri-flow lubricant with the PTFE and putting some on about once a week in the winter time. It will help keep stuff out to some degree.

I'd be worried of dirt, and debris sticking to any lube I smudged onto the uniball. Some kind of removable hat would be nice.. I suppose I could just run some tape over it?

The tri-flow is a dry lubricant. Never use a wet lubricant on uni's. Tape could possibly work, don't forget that the under side is completely open too.

Only on certain Uca's they offer it and our trucks isn't one of them. The cap on icon's is great and all but the underside is still completely open to the elements. Uni's just aren't meant to be anywhere but the desert. There's a reason you don't see true prerunners where it snows.

I bought the Icons because I was okay with the price and happy with they results. Based on that I can't offer any advice since I didn't look for any other solutions. Regardless of which UCA you would purchase I'm betting you would be happy with the result. I would like to mention that I think one of the UCA manufacturers says they won't work with stock wheels just in case that's a concern for you. (I don't remember which 1 so you would have to talk to them.)
