Default Parts completely interchangable?

I have a 2004 Super Crew and I've noticed some online retailers do not differentiate between heritage and the new body style. To avoid getting heritage parts shipped to me can I just set my truck year as 2005 or are there differences?

I think you're OK doing that. I don't know of any differences between an 04 or 05 cosmetically or mechanically. I do know that there are some slight differences between 04-06, and 07-08 models though. (front frame section, and different available rear axles). Also, (and I'm not sure about this because my truck is not reprogrammed), but any chips or tuners you use MAY be VIN-specific where you might have to differentiate.

If it were me, I'd contact the vendor and ask them how they want you to do this; we can agree that the 2005 to 2008's would not conflict with the early 2004 Heritage, but that might not make it right with the vendor!
