I know every pickup is different and dependin on what mods you have, but what is the typical amount of mileage left in the tank when the low fuel warning light comes on?

It's not recommended that you drive the truck until the low fuel light comes on. The reason is that you have a submersable fuel pump (fuel pump is in the gas tank) and the pump is kept cool by the gas. Continuously driving the vehicle with low fuel can overheat and burn up the fuel pump.

I try to fill up when I reach 1/4 of a tank.

usually mine comes on when theres about 3 gallons left in the tank so Id assume around 45-50 miles but wouldnt chance it that much.

Cars are about 40 miles. Trucks are probably about the same but more gas!!

You'll get more mph if you fill it up before the half mark! Also it won't be as much to fill it up.
