8200 leveling kit?
Tomorrow I am going to order a 2" or 2 1/2" leveling kit, truck
Measures 40" from ground to fender in rear, and 36 1/2 in front.
2.5 looks like to much, truck is 4x4 and has the 8200 package

Why does 2.5 look like too much? By your measurements, that will leave you with a 1" rake. That's perfect in my opinion. I don't know much about the 8200s but 2.5 is pretty average for the regular 4x4 f150. 3" is a little excessive and 2" sometimes isn't enough.
Just buy something and try it. Once you change it out once, you will realize how easy it is and you can sell your 2.5 for a 2 if you really want. But I would go with 2.5 based on the general population, especially because you probably got some stiff springs in the back with the 8200

With that said, I haven't paid much attention to the 8200. Don't know what its all about. Don't know if my truck has it. I remember the old F-150s had decals all over to make you know they were heavy duty but haven't noticed anything in these models.

I will need struts here pretty soon and I already have a 2.5in level on my 04. What struts are out there that can just use with my level?? or would it be easier to do the bilstein 2in strut with the .5in spacer?
Its the right way. Spacers are just like rear blocks. It gets the job done but improves nothing just makes it taller. Look up the bilstein 5100s you will find a ton of reviews
