Coolant fan
2011 f150 ecoboost 3.5. When ac is on fans are on coolant temp around 190 to 197. When no ac 200 to 215. When ac is off electric fans will not kick in until 215f. Is this normal?
No, it is not normal. (unless exterior temps are over 90) Something is not quite right in your ac.
I should say....what you described with the ac off is normal. But not where the fan is always on with the ac.

Seems normal.
My 2013 5.0 is the same.
Thermostat is 195.
Fans will run when A/C or defrost is selected.
Normal temp runs between 185 to 207 depending on outside temperature and engine load.
At idle with A/C off, temp will rise to 210-215 before the fans kick on, usually low speed.
When outside temp is around 85-90, fans will go to high when A/C is on.
Fans should go to high with coolant temperature at some point, but I have never seen that on my truck.
The temperature gauge is a semi-idiot gauge.
It will read in the center of the scale from about 170 or so to some higher point.
I've seen 215 on my scangauge but the dash gauge reads in the same place as 180, and doesn't move.
Transmission temp gauge is the same way.
Center scale at about 150, and I've seen as high as 207 on my scangauge, but the dash gauge never moved.

I think my two fans only have one speed. Both fans will turn on with ac on and if sitting idling when temp reaches 215f they turn on. I have never seen a difference in speed. When it hits 215f fans turn on and temp drops fast to 195.
The fans are designed to be two speed. In low speed, they are connected in series so each is operating at half battery power. When the PCM commands them to do so, they are switched into a parallel powered configuration where both receive full battery voltage.
You'd have to get it a lot hotter than 215F for them to kick over to high speed operation.
