I would assume the max tow package overrides some of the off road features like the offroa suspension and the gear ratio. The max tow is a bit stiffer ride, but not so much that you would notice if you didn't know any better. I feel your pain, I actuuay switched the sale of the truck I ordered to one that I saw on the back lot (not inventoried yet) because I liked it so much more.
FYI the tow mirrors look and work great but you are pretty much relegate to the back lot at the mall as they make the truck very wide, unless you don't mind folding them in all the time of course.

My 2013 Lariat has both the off road package and the tow package with 3.73 elocker.
My suggestion is if you are going to go with aftermarket tires that are larger or heavier than the stock tires go with the 3.73 gear ratio.

Honestly except for gearing related items, anything "offroad" from ford is junk. True aftermarket shocks, coilovers, springs, tires, skid plates are all better and cost effective. Get everything else like engine, gearing, locker etc. from the factory and then plan on upgrading later. I wouldn't agonize over the factory options if it came down to it. Heck I don't think I would spend 100 dollars for the supposed offroad tires they offer.
