You should wire your subs voicecoil's in series. This gives you a final impedance of 4 ohm.
Note: when wiring multiple drivers it is recommended that series connections between drivers be avoided at all costs. (Which is what you were showing in your Sonic Electronics picture. This does not include series connections made between voice coils on the same driver which is what I am talking about here.
Here is a diagram:
You can wire the voice coils in parallel at 1 ohm but I cannot not guarantee that you don't either throw your amp into protect mode or burn it up entirely. You will have to weigh the risk. Your amp is not 1 ohm stable.
I would strongly recommend a 4 ohm final impedance as your can't wire two DV 4 ohm subs at 2 ohm and you amp can't handle a 1 ohm load.

After I had a custom made box built for my 2 15" RF HX2's which I ran with the Orion HCCA 275 at 1 ohm I blew the rear view mirror off leaving the Stereo Shop, lol. Was a beast..hot as hell but a beast!

Wow those are old subs! That's when Rockford still used pulp cones, great woofers. Like the above mentioned, you can run that giant amp but it would be way overkill. I'm sure eightball will jack this thread and say otherwise could easily run those subs with a good D class amp that puts out a clean 500-1000 watts. Here are a few good examples.

Had you sent me this yesterday...lol. I picked up a Rockford Fosgate R1200-1D off Amazon for 250 shipped last night..but thanks. I would love some input on the amp settings. I'm going to 1ohm the two 10" 500rms RF HX2's. I have zero knowledge on the settings.

80Hz low pass, 30Hz subsonic, and 0 bass boost should be safe settings to get you going.
Setting the gain is completely dependent on your specific equipment. (YouTube how to correctly set it. There are several methods.)
In case you don't already know, Rockford recommends sealed space of 0.75ft3 per sub for those.
