someone was telling me people do it all the time and they just buy a touch screen for it

 

Appears that it has been done. Google 'mac mini in dash' and a lot of stuff appears.
As a life long mac user it is an interesting concept - one guy even had a wireless Mac mouse and keyboard set up - not sure why... but an interesting concept.
