I don't fully understand it yet but I got it work.
It appears it was stuck on shuffle for some reason. I went through the menu structure using push buttons again and it straightened itself out.
It also appears that if you enter through BROWSE FOLDERS it switches to alphabetical order and if you enter through ALBUMS it is in track order.
It's a bit cumbersome but once it's in the proper mode it appears to hold that mode for voice commands. Time will tell if this was a one-time exercise or needs to be repeated periodically.
I didn't spend any time with other options so there is some left to figure out, but for now, I think I'm good.
I would still be interested in any more information anyone could provide though.
