Update to my situation: So last Saturday it died again, but I did have my OBD scanner hooked up, and it pulled a P2112 code, "throttle stuck closed." So I parked it, and thankfully, on Monday morning I got up early and it made the 9 miles to the dealer no problem.
They fixed it, and I picked it up late Tuesday afternoon.

Yes, absolutely. Just like you said to do, when it happened on Saturday, I snapped a photo and sent it to the service advisor I had worked with the week before. And curiously, this time, unlike the first time it happened, the engine ICON stayed lit on my instrument panel, although the wrench went away after restart. So when I went in on Monday, my scanner was still hooked up, and the code was still there.
Yes, they replaced the throttle body. It was covered under my extended warranty....I paid $100 deductible, and they covered a rental car for 2 days.
