Low Idle / Stalls out when turning or at stop signs

first thirty seconds sits just below 500 and then it goes to just over 100 and stays there until i put it into park, at which point it goes back up to 800 or so and then drops down to 500. at stops or turns, the rpm goes to almost 0 and if i turn the wheel with full or near full pressure on brake, it drops and stalls out.

The engine can't run at all below ~200RPM, so you should never see "almost 0". If you do, it's either a fault in the tachometer, or you're misreading the tach. If the tach is faulty, then the whole question is moot. Your sig doesn't indicate if you're using a factory tach, or aftermarket.

first thirty seconds it idles at 1100 then drops down to 800 and will stay there. sometimes when i start it it will rev up to 1200/1100 and immediately drop and quit

From my experience, the normal cold-start-up reaches 15-1800 rpms in the first 30 seconds and work its way down from there over the next 2 minutes, depending on the ambient air temperature that day. Your cold-start-up seems a bit low. Settling at 800rpm is close to normal, I believe the standard is 650rpm in Drive.
