Its personal preference too. I find that leveling via measuring from fender to ground gives the truck a nose high look. Any load in the bed and it will start being out of level in the opposite direction. But thats just me; I prefer to retain a slight rake after leveling.
In general, 2.5" gets you pretty close to level. Theres a pile of leveling posts, even threads, that you can take a look at. Also try Custom Offsets gallery:
