Lift the truck from the frame to let the suspension droop and make it easier to pry those leafs apart.

Yes, that would work, it isn't a permanent fix, but good enough to see if that's the trouble.
And yep, jacking the truck up would likely be easiest, just be sure to use jackstands too, safety first.

Did they lube the new bushings before installation. If they are those high durometer bushings they have a habit of squeaking /noisy etc.

Also, I haven't noticed this before, at least when I was doing my oil change, that the differential has a potential leak? Is this semi-normal or should I tighten this plug?

Very small leak. I would take it out put some sealant on it and reinstall.
