Default Getting P0430

2019 5.0 Whipple stage 2 with custom OZ tune. I recently had check engine light coming on intermittently. It setting P0430 Catalyst system below threshold. I replaced the bank 2 sensor after the cat and still getting code intermittently.
I have a set of GESi high flow cats. Any idea's on what may be the issue.

Take the cats off, gut them, reinstall them, and tune the rear O2s out.

I have a OZ tune so I don't know if I can do that. How about the adapters for the rear sensors do they work?

I've seen a mixed bag of results; some say yes, some say no, and some say it worked for a while and then failed. OZ won't tune them out for fear of the EPA fines. I have used HP Tuners for years, which would allow you to tune the rear O2s out.

I've heard that. I still have it because I haven't updated my software in a long time.

Is it possible to install resistors or something inline to trick the computer?
