Maybe a bad thermostat? Or get one that activates at a colder temperature.

I would get a OE thermostat ..If you havent did a complete flush i would do that in the process.. and do a 50/50 anti freeze and water mix..

Default thermostat

Mine did that on my 95 Bronco. I replaced the water pump, timing chain and gears and put in a new sending unit for the temperature gauge and thermostat. It would warm to mid range on the gauge and then out of the blue it would rise and fall back down to normal. I replaced the sending unit again and went through 2 more thermostat before I said hell with it as long as it doesn't climb to hot and stay I'm good with it. The org. owner had replaced the radiator just before I bought it. I did notice though that when I stepped on the gas a bit I would have air noises in my heater core. Maybe it had a trapped air pocket. Anywho we drove that thing all last winter and this spring like that before we traded it in. I know that doesn't solve your problem but I guess I'm saying I wouldn't panic over it. I'm sure you'll solve the problem.
