Powertrain Regrets?
I've owned both the 3.5 eco and two 5.0 F150s. I actually just traded my eco on a 15 Scab, 4x4, 5.0, 3.55 e-locker with the sport package I love this new truck. I don't drag race or tow a ton, so I didn't need the extra torque. I missed the rumble of a v8, and I could never get used to the sound of the eco engine. Both engines worked great for me, buy like am earlier post said, it just felt wrong without a V8 under the hood.
Anytime you add more weight to wheels you're going to take a performance hit. I've got the 5.0 SCREW platty with 3.31. I think it rocks even in lower gears. I don't experience the lag etc your talking about. The tranny know my habits and downshifts nicely. I'm not a light foot either. Good luck to you. Have you considered going back to stock?
I don't think there is a good win all situation yet with Ford's Powertrain offerings. The 3.5EB just received another TSB for yet another revised timing chain affecting all models from 2011 to end of May 2015. This is like the 3rd or 4th redesign of the timing chain to combat the fatal chain stretch issues its plagued with. Long term, no way I could trust it.
I do feel the same as you with acceleration performance, except, I thought the 3.73 gears would have solved it for me as I have 3.31.
Now I'm thinking the answer is a tune, like from Livernois. It specifically addresses the throttle lag and low power at low RPM. It will never approach the hole shot of a tuned Eco boost, but it will help it feel like it can get out of its own way.

As for tunes I like the idea I just don't know if I'm willing to take the risk on one. It may not blow up the engine but I just am afraid of engine knocking

I don't think I could ever go back to stock tires and wheels partially as I sold them but even if I didn't I like the wheels so much more. I will get slightly smaller lighter tires in a 285/65/18 vs my 285/70/18 I currently am running whenever these wear out.
When I test drove 2 EB I was shocked at the difference though. The first I test drove I spun the tires at 30+ mph on a wet road and the other EB I test drove seemed slower than my current truck. Might have been a 3.31 but they sure felt like 2 different trucks even though they both were Ecos
If I had the extra cash I'd love to add a turbo to the 5.0 and it would surely fly you're right. Not a big fan of superchargers though as I like the turbo whistle better than the supercharger whine. Wonder why you only see SC kits for the 5.0 and never turbos...
I would do two things differently if I could go back and do it again:
1.) I'd get the 2.7 with a 3.55 or 3.73 e-locker instead of my 5.0. For my purposes, the little 6 would still get the job done and save a good bit of fuel.
2.) If I got the 5.0 again, I'd get the 3.55 e-locker. Not that the truck's overly slow with the 3.31, and not that I really need the e-locker with 4x4, but would be nice to have.

Love my 5.0 even with 3.31, only regret I had was the small tank but that's fixed now. The power is there when you need it and I can cruise the interstate at 82 mph turning 2k rpm and still get 17 mpg with no air dam. And I am confident in the reliability of this engine also
Smaller market for turbo kits on trucks. Plenty of turbo kits out there for the mustangs, but the piping and intercooling would be altogether different.
No regrets here. I think 3.55s and the 5.0 match up perfectly. If I was going to run 35s I would have gotten 3.73s, but that's about the only change I'd consider.
