Need advice
So I have a 2015 F150 XLT 2.7 ecoboost with 160,000+ miles on it. I found a 2017 F150 XLT 3.5 ecoboost for a pretty good deal with 40k on it. I am on the fence about pulling the trigger as the new truck has the bigger motor and the 10speed transmission. Is the bigger motor worth it? Are more gears better? Please let me know what you guys/gals think.

I second that. You got a lot outta out of the 15..a nice 18 or 19 with low miles would be the way to go with as less miles as possible. I have had the 2.7 now I have the 5.0 both great engines. Good luck.
I have a 2020 with the 2.7 and 10 speed. The engine is great as you already know.
The tranny is OK. Smooth most of the time but erratic sometimes. I feel like it’s the weak link in the drive train. It doesn’t feel as solid as other trannys ive had. Occasionally it hunts for a gear then slams into the lower gear. Not a fan.

The 3.5 is a decent engine, the 10 speed? I've had a '17 3.5, and now a '20 5.0, both with the 10. My '17 had problems with surging, scary in a parking lot, but the TSB took care of that. On both trucks, it liked to skip gears, going up and down. A good tune will work wonders with the odd shifting. Oh yeah, both trucks were tuned.
Now would be a good time to sell high used and buy new for as low as you can get it. There are a couple of dealers that hang around the forum who will give you a below invoice price even today (but you have to order it to get that price). Order a new one and sell or trade yours when it comes in. Trading used for used, especially through a dealer, will cost you around $10,000 more dollars than it should because you're going to be offered around $5000 less than you can when get trading your truck on one you'll be paying $5000 more than you should with the same dealer for a used one on their lot and that's under normal circumstances.
