Because that's how they design it unfortunately. It is annoying.
Just get used to opening your door (so the radio turns off) before you unplug, and have it plugged in before you start your truck.
That's what I have been doing for over a year between our C-Max and F-150 (both with Sync 3) and I never have it return to AM.
Now, if you have Sync 3 2.0, it will often still return to AM, which is annoying. Get Sync 3 2.2 and that resolves it.
If you have MFT, then just follow my directions above. I did the same for three years in our Flex which had MFT and again, no issue.
You just have to change your habits slightly. It sucks to have to change due to an annoying "bug" like that, but there's no option on the radio to make it behave differently so in this case if you want to avoid it you need to change.

I am pretty sure that it actually goes back to the last non iPhone source. I know mine always goes back to Sirius once I disconnect my iPhone because I never listen to AM or FM. Try and select a different source before you connect your iPhone and then test again. It should go back to the source you selected. Once you do that once, it should go back to that source until you change it.

Sync 3 does this, but the prior version of Sync always reverts to the first media source, which happens to be AM. It isn't a bug, or a feature. When you disconnect the USB source, that media goes away, so Sync3 then selects the last source, and Sync2 selects the first source.

Then I figured it out, its like a computer. Plug in a USB stick, bring up the file folder. Then unplug it, what does the computer do, closes the window. Whatever window you had open behind it pops up. In the case of Sync 2, that window happens to be the AM radio. I am just happy that Sync 3 reverts to the last opened window instead of the desktop.

No, it wasn't. MFT was built on Microsoft Auto 4.0, but that has no relevance to how it handles source changes when a source disapears. Ford farmed out the actual development of MFT to a 3rd party that did a terrible job and built it on an easy to develop but inefficient coding language which was largely thrown out in the big MFT rewrite that happened a several years ago. MFT just never recovered from it.
It's the same as Windows on your PC. If you have a crappy program running on it, it isn't a Microsoft product, it's a crappy program. That's what happened to MFT, they put a crappy program on top.

Have you had the patches done and upgraded to V2.2? I had all sorts of issues with Sync 3 when I first got it, including where it wouldn't even power up, and after the service applied a couple updates, and I upgraded to V2.2, it has been working just fine.
