How long do updates take?
I have a '16 w/ sync 3 v 2.0
Every time I tell my truck to look for updates, the circles just keep spinning and never show any results.
Should I get a message about no updates at this time etc?
I am on a good Wi-Fi connection to my house and I have tried tethering to my phone with the same results.

Yeah, I get a message that says something to the effect of "your software is up to date." I do notice that it sometimes takes quite a while to tell me this, and other times, I give up waiting before it says anything.
Mine shipped with 2.0 as far as I know, and I had an OTA update as soon as I checked the first time. It's still 2.0, so I'm not sure what the update was, but there definitely was an update. 8/16 build

Mine has been doing this too. It says last time it checked was 1/23/17 and I cannot get it to complete a check. I know there isn't an update yet but its obviously not automatically looking either.

No, it still won't update to 2.0. There is no 2.0 in the wild outside of trucks that got it from the plant. The next OTA update, for everyone, is likely to be the 2.2. Eventually.
As for the update, it's probably because your wifi signal in your garage is poor, or at least, the truck's signal it is able to pick up is poor. Even if your phone gets good wifi in the garage, the truck wifi radio is buried in the dash I am pretty sure, so it's going to be more limited.
So it may be getting a signal, but it's a really poor one. The only Sync 3 vehicle we have is our C-Max, but it gets great signal in our garage because I have one of the best routers on the market and it's located a reasonable distance from our garage. Mine has checked for updates like clockwork.
If your phone has the ability to create its own Wifi Hotspot, turn that on and tell your truck to connect to it and try again. I bet (assuming your cell signal is good where you are at that time) that it completes without issue because the wifi device is inside the truck.
