Honestly, why are the 2.7s as fast as the 3.5s?

I don't think that's the case. The ratings, torque demand tables, and dyno results all say the 3.5 Is more powerful.

yeah my last 3.5 eco had a good tune ans would pull to 125/130 and still pulled but i only dis that once in an empty road just not comfortable going that fast in a truck. I'm sure a tuned 2.7 would do the same and a supercharged 5.0 would lead the pack lol
I have been driving for almost 30 years and almost that whole entire time was spent behind the wheel of V8 Mustangs so I am pretty good at spotting other guys who "want to go fast" He was pushing that Dodge hard and passing everything on the road that he came up behind. I first spotted him right before I passed a long pack of cars and soon after that he got around them on double yellow lines. His truck was not sluggish. Trust me be was hauling ***. I was not looking for a side by side highway race, chipped paint or a cracked windshield from the dipsh!t. The guys in the area are big on tunes and installing go fast parts on their diesels. His truck was quick but the 2.7 was a lot quicker. I guess you just had to be there dude

this all happens to protect the drive train and to increase fuel efficiency. To protect the trans and diff and more parts, Ford puts limits on the amount of TQ the engine sends thru the drivetrain. This TQ limit is most likely the same for all 3 engines.

So at launch and to 60ft its NASCAR. All 3 are almost completely equal in limited TQ & HP.
You're sort of right on the throttle body not opening. The accelerator corresponds to desired torque, the ecu then determines how much air (air load) it needs to make that much torque and will close the wastegate and open the throttle body to get there.

With the way turbos spool there is a deficit in torque until boost builds, then it would overshoot the ecu's goal, so the computer closes the throttle body to limit the air going into the engine. Most manufacturers do this now because it's more responsive to use the throttle body to control the air (it can be actuated very quickly) going into the engine than it is to open the waste gate to compensate for the surge in boost and then try to close it again and have the turbo build boost back up.

I'm on my phone right now and can't pull the torque tables for the 5.0 and 3.5, but if engineer Mike doesn't respond before I get back to a computer I'll try to post them up.

It seems somewhat simple to me that the lightest engine might have the fastest 0-60 times. It also makes sense that the other engines might have better 1/4 mile times as the smaller displacement probably runs out of steam faster as well.

I owned a '15 2.7 and now have a '17 5.0. The 2.7 was clearly faster from a stop, but passing on the freeway, the 5.0 feels much quicker to get around traffic. I would imagine the 3.5 shines the most on freeway performance. The '15 was also 2wd vs the '17 being 4wd so that may affect how fast they feel from a stop.

Disclaimer, all of the above is anecdotal. Lol

My 2015 2.7 Eco would absolutely eat my buddies 2015 3.5 Eco for breakfast. Both were Screw 4x4. Mine had 3.73 gears, his had 3.55 gears. That's one major difference right there. But I would pull 1 full truck length on him & he never would catch up. That 2.7 Eco is a "sleeper" for sure, especially with a tune & some mods. But I wanted my V8 sound back, so I sold it & got me a 2017 5.0, which doesn't do anything until you hit 3K rpms, then it turns into an entirely different beast.
