But in reality option 1....if you cant see out you shouldn't drive it....and no scraping the inside of your windshield is not a viable option.

Never got frostbite inside a vehicle. Of course if you cannot see then you wait until you can, which will be a lot longer than 3 minutes.
OP stated 'Why does it take like 3 min for the engine to warm up. I mean its pinned at 1.5 RPM and then slowly goes down to under one.'
Answer 'truck is designed with a bunch of parameters to determine when do drop to low idle'

Response 'Unless your interior windows are frosted up and needs time to clear' just pointing out there are in fact reasons one of which is a major safety hazard that unfortunately many people fail to follow.
That's what remote start is for..
Or clear the moisture out of the cab before parking it, and you won't have icing on the inside of the windshield (the outside is much easier to scrape)—just run the AC and defrost on full cold for about the last 2-3 minutes before you park, and get out quickly once you park. Should be enough to dry out the air without freezing you too badly.
