Which engine for a RCSB 2wd?
I'm kicking around the idea of ordering another F-150 to replace my Frontier, I had a 2011 that was a great truck. We also have a 2012 here that has been great as well. Both of those trucks had the 3.7, and I was a little disappointed to see that it isn't offered anymore. I had that engine in a 2013 Mustang and was very happy with it there too.
The truck would be a 2wd RCSB XL with 101A, basic trailer hitch and the Sport Appearance package as the only options, unless I need to order a different rear gear ratio. The only towing would be trailers 6x12 and smaller, hauling nothing heaver than a Polaris Ranger. The 4 cylinder Frontier does an acceptable job, but could be slightly better at times.
I'm leaning toward the 3.5 and opting for 3.73 gears. My 3.7 had 3.55's and I was thinking that a little extra gear would help make up for the lower power.
The 2.7 also looks good, but I have to admit that I'm hesitant.

I'd get the 2.7. Lots of power. Good mileage. And it's not that much more expensive. Lots of new technology in the 2.7 (some will argue that's bad).
Better yet, get the 8' bed and the 3.5 EB. That would be what I'd get if I were looking for something similar to what you want.

I ordered the 3.5 in my RCSB 4x4.
The 3.5 is the same engine as the 3.7 just smaller. It has a little less power, but the truck is a lot lighter.
I think the 280 hp 3.5 is going to be fine for me. It's a 4000 lb truck and that is good power to weight. My last 2 trucks were 78 and 91 Chevys that had 150 and about 200 hp and were heavier. They could both tow a 2000 lb trailer with a 3000 lb car on it no problem at all. I expect my new 15 will be able to do the same. It's rated to tow 7500 lbs.
I'm still a few weeks away from mine arriving.

The (n.a.) 3.5 or the v8 are your only options aren't they? Not sure you can get an EB in a reg cab anymore. Keep in mind the 15 reg cabs are a bit shorter than the 09-14 reg cabs which means less weight. Combined with the slight bump in power for the 15 5.0s and that truck will get up and go.
