I believe the reason for the rear block is that the 4X4 front is almost 2 inches higher (due to front drive train) than the 2X4 models. Thus the added rear block in the 4X4 models keeps the rake about the same as the two wheel drive models.
Below is a pic of my 4X4 on the left and my bud's 2X4 on the right. Note the difference in height at the mirrors and front end. They are both stock and the 4X4 is a little less than 2 inches higher.
I want to remove my rear blocks as well but don't have a car lift so it will be using jacks and jack stands. Is there any risk to the rear axle or drivetrain in loosening and retorquing the ubolts? Can things get misaligned? Dealer is charging .7 hours shop time and new 2wd ubolts to do it.
I did my 3" blocks at home with a jack and jack stands, not much to it at all, took me about an hour, be even easier with taking blocks out, dont have to lift the rear as high.

The new 2WD bolts are because once you pop out your stock block, your current Ubolts will be 1.25" too long (the height of the removed block). You can just cut the ends off, but make sure you have enough thread on the live end of the bolts before you try reusing them. It can easily be done with a jack and lift stands.

They can easily be done in the garage. But, for 0.7 hr charge....I'd let the dealer do it. It'll save you an hour or 2, maybe a busted knuckle, getting sweaty, and they should torque them to spec. It sounds like a deal to me!
4WD rear blocks are 1-3/4". What is the 2WD rear block height? And they should be interchangeable, right? I'm wondering about replacing my stock 4WD blocks with 2WD blocks and adding a leaf to get you the height I want. I'm looking to net around +1" in the back, which I might be able to do by losing 1/2" in block thickness and adding a 1.5" leaf..
