So the dealer just hands you the keys to all the trucks to inspect and has you inspecting the trucks they deliver?

Me thinks you exaggerate.

So...does my XLT with sport appearance package have a different black interior/dash than a lariat? (Other than the cloth seats)

You don't need to get in the truck. You can see it through the windshield.

I have a '15 Lariat in a hot climate with no issues so far.

Trim levels below Lariat sometimes have that issue. The dash will warp (bend up) right in front of the windshield. Lariat and above have a completely different dash pad which is much thicker and will not warp.

I had a 2015 King Ranch and now have a 2016 Platinum........no issues.

The above applies to at least 15-17 model years; I don't know if Ford changed the design for the 2018s.

I don't think it's heavily complained about because most people don't notice they have the issue - unlike the sunroof which makes an audible noise or has water coming out of it.

Mine is slightly warping too but I never noticed it until I happened to see a thread about it and went outside and specifically looked for it.

I just looked at my '15. No warping at all. We have some pretty wild temperature fluctuations here too.

I looked at the dash in my 18 today and it seems to be warping pretty bad. I never had an issue with my old 2015. Guess I'll be taking it in next week.
