If everything else checks out, could this cause the engine to sputter, die, yet start right up?

No. The VSS has nothing to do with the engine.

No the Vss shouldn't affect the running of the engine, just the drivability. If it starts, runs for a bit then dies it sounds like a fuel issue. Im guessing you did a fuel pressure test, but im wondering if you have enough flow?
