I'm still a bit used to driving a carbed vehicle.
I put my foot all the way down, turn the key, and she takes a while to catch on and start

If you have fuel injection, you do not have to touch the pedal to start the truck. It automatically shoots fuel when you turn the key.

Do you have a problem when starting where you have to give it gas?

She always starts fine, unless my foot is on the floor, no big deal, just didn't think thay would affect her that much.
I like the sound of a truck revving up from 0 to 3000 RPMs, that might be why I do it.

When you put your foot to the floor in an EFI vehicle, The ECM wont deliver fuel to the rails.

when you put your pedal to the floor on a an EFI system the PCM shuts off fuel delivery to the rails and sends the vehicle into a "clear flood" state, if you will. if you take your foot off the gas pedal and start regularly it will start just fine. like you alredy said.
