Default Rebuild

I recently purchased a 1991 Ford night, F150 5.0 with 84000 miles. 4 months later it blow a head gasket. Now I am in the middle of pulling the engine to have a local builder work his magic. I would like to reassemble without all the emissions, would anyone have any recommendations on this project.

Maybe do away with the factory efi and go with aftermarket efi from companies like elderbrock? What type of budget are you playing with?

Thanks and as for the budget, I am just playing it by ear. I am open to almost any thing. I will definitely research the EFI recommendation. I just want the best long term product I can get. It will be a low mileage vehicle and eventfully end up in the hands of my Son, later rather than sooner.
