So I replaced the vacuum canister. Now the heat blows warm, and the air blows cold, and the temperature problem is obviously fixed. HOWEVER:
Now no matter where the selector is set it only blows out the defroster.
?!?!!?!?
I hate this.

LOL (sorry) In a sick way it's nice to see someone else sharing a little bit of frustration...
Anyway - you might still have vacuum issues behind the dash - maybe pop the glove box and pull the radio/hvac control and see what you can find in there. Should be a vac line coming through the firewall on the passenger side and going on to the air diverter from there if I remember right.
Just keep in mind - at least it runs! Comfort is secondary.

We'd do it

Defrost is the default setting when no vacuum is present so you can still defrost the windshield if there's a problem. So vacuum isn't making it to the controls, either the vacuum came off or the plastic vacuum line broke under the hood, or it's disconnected or broken under the dash.

I have a 2003 F-150 SuperCrew with this same a/c problem: everything blows out of the windshield defrost vents. Is this a common problem that Ford knows about?? It seems that a truck that is less than 10 years old shouldn't have an issue like this happening.
