Honestly not too sure where to start. You could try and remove the harness, and jump between pin 5 and 6 so you can start the truck (warning tho, this means you can start the truck with the clutch engaged). If it runs its got to be a fault somewhere in the electrical. I will look a a few diagrams and see what to test.

Unplug the IAC and see if the idle changes.

Unplugged the IAC and it did what you said it wouldnt do. It shut the engine of almost immediately. Im going to go to abtech and unplug it when its warmed up and see if i get the same results.

As for the clutch switch. By jumping 5 and 6, are you saying to run a wire from plug 5 to 6?

It didn't cut power, it just didn't control the idle so it stalled. That is good.
