engine stays at the cool mark
I have also seen cheap *** valuecraft thermostats being stuck open or can't hold shut with pressure/ engine revving opening them up prematurely. I think it could only be the sending unit and the thermostat or on the rarer side, bad gauge.
By the way, that reminds me.....Isn't this gauge more of a dummy gauge too in that it has only a few positions for various temps, not a true reading on temp. It may be wise to get an aftermarket gauge too....
Another edit....I see your from Green Bay Wisconsin. In that case I hope the truck dies!!! Just kidding, but I'm a Bears fan.

Did you replace the temp sensor or the temp sender. The sender is what sends the signal to the gauge the sensor tells the computer what temp the engine is. Make sure you get the sender for the gauge instead of the sender for the light.
$40 sounds like he replace the Sensor instead of of the sender. too bad you didn't do an error scan first too. Could buy almost two code readers for that. One for the weekend/ one for thew week day's!
Try the 195 degree Stant superstat. It'll run you about $8 to $10. It's heavy duty and if you hold that one in your hand and a cheap one in the other hand, you'll notice it's heavier than the el cheapo $1.99 stat. My thought is it being a little heavier may account for the better quality.
