I've got the same truck. The only time it sputters is when I'm running out of gas. You have dual tanks, right? Does it happen with either tank? '87s have 3 fuel pumps. One in each tank and one on the frame. If it happens with either it can be the fuel filter or the frame mounted pump. You should do a fuel pressure check. A quick check for the regulator is with the engine running, disconnect the vacuum from it and if idle picks up it is working. This is assuming it's running well enough to idle. When I have any problems I always start by reading the computer first. It usually gives you a place to start looking.

Idle increasing when vaccuum line is pulled off of regulator is probably normal. Have you done a compression check? Does it have any codes? Is engine temperature normal or is it still cold?

Check for computer codes. Detailed description of how in the maintenance section. Check the fuel pressure.
