If you were to set your 5100's to the 2.1 setting, it should walk you right into where you want be.
The tires? Your choice, but 34" should work unless you get into a big negative offset on wheels, then butchering/bending would come into play. I know a +34 works well, read that, "Raptor" wheels.

I'm like yourself, I lowered the rear and lifted the front, but maintained a 1" rake in case I get too many groceries.
Our truck’s rake will vary. I think my truck had about 2.25” rake. From what I’ve heard 2017 usually has about 2.25”-2.5” of rake.

Quite a difference in heights. I know for sure mine was 3", as well as the other guys were. I wonder what makes the difference, maybe the weight between a SCab and a Screw? Judging by the minimal weight of cargo that can make these things squat, I'll bet that's it.
I wish mine would have been 2 1/4". After my drop shackles, I would have been close to where I wanted to be without raising the front 3/4" with the Bilsteins.
Maybe should recommend the OP measures before he goes any farther.

Mines at nearly 3" of rake. 2017 SCREW 4x4 FX4. I wonder if the max towing package has anything to do with it. Doubt it but just a thought. I have 5100's on the way for the rear. Will do the front's in a month or so. Will be setting mine at 1.75" to keep some rake for towing. Right now, even with the WDH set with a hefty setting on the bars, I get about an inch of droop. i'll be good with that, but will be doing airbags in the the next few months as well.

I wonder if the 2wd like mine has less rake than the 4wd? I believe the 4x4 is higher all around but not sure of the rake.

Not a concrete rule of thumb, but it seems the difference was an inch in height, F/R, between the 4X2 and the 4X4. If you would, take a measurement for us for sake of conversation.
Mine is not HDPP, just TT, with 275/55/20 tires, and my measurement was F-37", R-40" the day I brought it home, +/- 1/8". 9.75 axle. Don't know the difference in thickness of the axle tubes, but that could be larger than the 8.8".

I can get a RC 2" level kit installed with alignment for $300 OTD - I'm thinking about dropping it off in the morning.

any reason to avoid this option?

Pucks are never as good as replacing with 5100s. Two very different rides.

I put 5100s on all 4 corners and my truck sits 38.25" in the front and 39" in the rear, using the 1.75 setting. I'm running 275/60/R20 which is a 33" tire. Speedo spot on, no rubbing at all.

Depends. If you plan on zero off-roading and on a budget, then pucks are fine. I preferred 5100 because it’s like killing two birds with one stone: improve ride quality AND adjust ride height.

I won't argue that the 5100's are better than a puck, because they are. But if you want to save some money, I (and anybody I've ever known that did a puck for a level) have NEVER had any issues with them. Keep the level to 2" and you probably won't even notice the ride quality difference. You will a little bit though when you upgrade tires.

I've used the 5100's on previous non Ford vehicles and they were great. I'm not going to be wheeling this truck at all on purpose. Sure if I need to get down a logging road to deer camp or out into the woods to shoot, that's one thing but its not going to be a trail truck. Just want a better stance as a daily driver, so I think for the money I might as well go this route.

Now tires - need to order them, do I want 295/70/18's or 275/70/18's? Truck has the 5.0 and 3.55 diff.
