A 1 ton crane is plenty. As far as removing the engine, if you want it to be as easy as possible, remove the radiator. It's two bolts and then it slides out. I would drop the tranny separate from the engine. It makes removing it that much easier. If you can, get rid of the hood too.
I pulled my engine out with the hood still attached and the radiator on, and it was more difficult than it should have been.
If you leave the hood on, then try to remove the intake manifold before you pull the engine so it's not so tall.
The tranny had 8 bolts (I think) that connects the bell housing to the engine block. Now I believe that you can roll the carpet in the middle of your cab to reveal a plate that you can remove to make it easier to get to the top 2 tranny bolts. Wish I would have known that when I pulled mine. Put a sheet of wood underneath the tranny pan so when you jack it up it doesn't dent the pan.
