Just noticed my round spring bars have old worn stickers marked 750lbs. My tongue weight has measured 820lbs. I have been using these with the trailer since it was setup new at the rv dealer long ago. Would 1000lb bars need to be used. Would that alter anything. I have no problems towing. Trailer and truck both level.

They are rated to transfer 750 pounds, you say the trailer tongue weight is 820, the hitch should handle the difference. They look to be pretty near right to me, close enough to level with the frame.
I suspect the trailer is within the overall tow capacity or those bars, under 7500#. Possibly well under.
I had a similar issue the one time I finally went camping this Fall. I’d moved some weight around and still had a full FW tank after dewinterizing and working on the plumbing system in Spring. WDH Spring Bars rated 400-600#, tongue weight 690-695# per Haulgauge, trailer 3500-3600#. I decided not to get the larger capacity bars for such a light trailer. I’ll just move some weight around & NOT carry water in the FW tank, that should get me under 600# tongue weight.
IMO, your pictured mild upward turn of the spring bars is fine. If they were perfectly level with the frame, there would be little tension and little weight distribution.
Thinking about your comments, I believe I am OK. The trailer came with those tall 35 gal propane tanks. Recently they got too heavy for me to drag around to get filled, so replaced them with 20gal tanks and new regulator and hoses and cover so I lost some tongue weight there. The trailer is 26ft. Had it weighed with gear long ago and it weighed in at 5800lbs with the old tanks filled.
Tanks come in at 5,10,20,30,40 pounds for truck campers (small interior compartments) and trailer campers. I swapped out my single 20 to a single 30 for easiest propane upgrade.
First (only) time I CAT scaled my trailer was towed with my Explorer. Overweight TV drive axle without WDH, slightly overweight trailer with WDH. Went through EVERYTHING in both and remove a lot of weight. Weighed everything removed using either a 40# Max baby scale or bathroom scale with me holding the item subtracting just me. Even the lightest stuff adds up. All kinds of extra tools, cookware, cloth items (10# in excess towels & sheets alone), excess lawn furniture. Got everything in spec math wise, then I bought a truck
That's funny. I came from an Explorer also. I had a 1996 xlt 5.0L 3.73 gears. Tow rating was 6700lbs. Have no idea what payload was. I am sure we exceeded it by a lot. Am using same hitch setup as Explorer. That was my favorite vehicle. Had to let it go because I was concerned it was getting too old. Sold it and got the 2017 F150 XLT 3.5L and installed 5100s in the rear right away.

Through the years available in Ford towing guides, back to 2004 withe 4.2, the V8 WITH 3.73 tow package had 11,000# GCWR, & 7000# 2004 to 7310# 2008 2x4, 4x4 dependent. My 2008 4.0 V6 with 3.73 tow package had a 5225# tow limit. 6180# GVWR and 10,000# GCWR

Soooo you've used this setup for a LONG time with no issues? Grandpa used to say "if it's not broke don't fix it"
I have the same 750 and my tongue weight was 800-820 as well (Cat Scale) Seemed fine. And actually I have been heavier as I have determined when I was towing with the F250. I was concerned and started looking for higher rated bars but now I just don't seem to be that worried.
